why m.2 is bad is large files cannot transfer at higher speeds due to controller limitations

That is not m.2 controller issue. Dramless ssd(whether sata or nvme) have a fast cache of a certain size which gives best speeds as mentioned but once the data transfer/file size exceeds that cache then speeds drop sharply to even usb 2/hdd level(crucial p2 post cache speed is just around 40MB/s).
