In case of 'chronic' stress.. the amygdala can get messed up. It can even shrink and not function as desired.
Worsening of amygdala is colloquially referred to as an 'amygdala hijack'.
That kind of thing would probably not get addressed just by things like aromatherapy.

Indirectly it (amygdala) also determines the adrenaline and the cortisol levels in the blood.
I mean, the amygdala especially deals with emotions like fear and with social stimuli.
It can thus be the pilot-in-command or the pilot-monitoring for the 'flight or fight response'.
And the 'flight or fight response' will obviously prep the body, as per need, with cortisol and/or adrenaline.
olfactory nerves carry the scent molecules to the limbic system (which the 'amygdala' too is a part of).
So in that sense, yes.. certain sensations, smells/aromas can have a positive impact on the limbic system and thus help.
Often, in long haul flights, where the humidity levels inside the cabin are less than the humidity levels even in the Sahara.. it can dry out the mucosa and impact one's sense of smell.
Such things even impact the way our brain perceives the 'taste' of the food.
Thus, all these things are interconnected.
