I want to teach my Mother to read and write hindi . She is trying to learn her signature in hindi but I want her to read and write hindi also. I don’t have any ideas how to start.

Start with ka kha ga itself, she will be able to pick up quickly as compared we did in schools because we didn’t even know anything, she knows words n their meaning. What you’re doing is amazing

Start with basics i.e, alphabets( swar and vyanjan) like we teach kids. If she can recognise alphabets then move on to words. You can download books from online sites for that purpose. Next step would be making sentences.

I think you should start with writing basic alphabets and words. Primary school textbooks may be enough.
