Paryushana is the most important annual holy event for Jains and is usually celebrated in August or September in Lunisolar Hindu calendar, the Samvatsari Day celebrated on Bhadrapad Shukla 5 by both Shwetambar and Digambar sects. Paryushan started yesterday i.e. 12th September and Savantsari is on 19th September (Last Day of the Paryushan).

If someone wants to know more details: Jains who eat leafy vegetables avoid even them during the Paryushan.
All logic of eating which food and which food item not to be eaten is science based.
The basic principles is non-violence and how one can minimise the violence in their life. Hence, tiers are made for classifying life based on number of senses. Seeds typically have only 1 sense, plants have 2-3 sense, animals and humans have 5 senses. Higher the number of senses, the more evolved the life form, hence one needs to minimise/remove the intake of higher number of senses life forms.

Does it have a significant effect on your Haeomglobin, Vitamins D & B12 & Mineral (Fe, Ca etc.) levels. Can you share from a recent blood test of someone who sincerely avoids all these?

Best part is that health issues are less if we follow what is told to be followed. Best thing is experience is not eating after sunset which makes a person not fall ill regularly.

Potatoes Ginger Haldi ,etc Root vegetables is avoided throughout lifetime by true followers . However Ginger Haldi in Dry form can be consumed , no restrictions in dry dehydrated form .
