Everytime i eat free meals at South Indian temples,  it just tastes so much better than home or any restaurant I've ever been to. Especially that sambar with big veggie pieces.

What masala do they use? I wanna buy  same  ingredients they use. List them all.

Edit: also,  recommend a YouTube channel which focuses on that if you know any

Since I only understood doctor and masala,   I assume you're saying masala is unhealthy.  Maybe so, but south Indian masalas are not as strong as north.  They taste natural.

everything combined - old cooking method , wood , coal fire ... expertise of reciepe beng followed since centurys ... locally sourced spices , viegies and everything .

and at last the environment you are consuming the food and at last touch of GOD (physchlogical) .

I sneaked into their kitchen.  Pretty sure they use big gas stove.  But I know the taste of coal fire cooking.  That taste is unbeatable.

Try this.

Secret is fresh ingredients, very few spices, and fresh coconut.

Traditional recipes call for freshly ground spices every single day - they never use readymade 'masalas'.

The cooks have refined their skills for ages and have perfected the right combinations

Also as devotees most of us are hungry by the time of the meal and almost anything tastes good for a hungry tongue.

What you have is a perfect combination  - good food cooked by great cooks, served piping hot for the hungry devotees who are on a psychological high after darshan.

I've been to lots of temples and mutts in the southern states and never ever have I tasted mediocre food.

Would love to do the same in the North if I get an opportunity - especially a chance to be in a langar in one of the famous gurudwaras

I don't think most of us have the patience or skill to grind spices naturally to that level of perfection. The goal is to achieve the closest possible result using the best ready-made spices available.

In house masala. When i say masala, it never involves cinnamon and cloves.

Pepper, coriander, jeera, etc.

They do slow cooking on conventional stove (wood)

Rest is history 😉

They used to be better even a decade back. The taste is actually going down with time.

Even now I go to temple and have prasada food once every few months because there is something different about it which no restaurant can ever come close to.
