Anyone having experience of transferring his car's registration from one state to another? If so, please share the details.
Vaahan portal shows details of transfer of ownership. However, I just need to transfer the vehicle (inter-state) without changing the owner.

You still need to go through same process as if transferring to some other person in other state. You will get another registration number for new state after paying pro rata road tax. Also you can apply for refund of road tax from old state on pro rata basis.
If it's a white number plate, I recommend not to transfer.

I was using the car with white number plate only. Due to corona, I had shifted to my hometown and my car is going to be 15 in Feb. So, will I be able to extend my fitness in delhi for another 5 years without taking the car??
Fitness extension is not possible for 15 year old petrol car in Delhi NCR. You should take NOC asap. And then register at hometown. Then fitness extension after Feb.
Apply for NOC immediately, it takes approx a month to get it.
You will need ID Proof in hometown too like Aadhar Card, Voter ID etc. (Of that specific state for registration).
Ensure you have pollution, insurance, no pending challan etc. as they ask for all of this when giving NOC. In New state they will ask for car purchase price (If you have original bill, it will help) to calculate new registration fees
In Delhi you can apply for NOC online however all documents need to be submitted to RTO via registered post
