Good Morning everyone,

Many of us are learning how to cook, or have improved their cooking skills, are trying different new dishes. Today share one of those recipe here it could your regional recipe or something which your tried and came out nice. It could also be as simple as breakfast dish or supper.
Let us all know what different/new/first time dishes you are trying.

Pls do share in brief how to cook it. If you are referring some website or youtube then do share those links as well.

Ingredients: 1 banana, 1 cup milk, 3 ice cubes, 1 tablespoon white sugar, or to taste 1 pinch ground cinnamon

Prep:
Put banana, milk, ice, sugar, and cinnamon in a blender; puree until smooth.

Made beetroot poriyal learnt from a friend –
1. Take some oil in a pan and add the following : Mustard seeds (Rai)
Chopped onions
Curry leaves
Green chillies
Red chillies
2. Add chopped beetroot.
3. Add some grated coconut and sprinkle some salt.
4. Add some water and let it cook.
Here is the outcome : 
I dont know if it is a common recipe or not sweat_smile Made it for the first time yum

Peri Peri Khichdi 😋

The story of how I invented this recipe – During this lockdown period, mom often makes khichdi for dinner. Although I like it with oil or homemade pickles, I wanted to try something else. I bought peri peri masala from Amazon about 4-5 months ago. (Generally, I am using it with french fries and sandwiches) So, I wanted to try it with khichdi. Now, read how I made it.

How to make Peri Peri Khichdi
  • Khichdi is cooked in most people’s homes (especially Gujaratis). So, I don’t need to explain how to make khichdi. Still, If you don’t know then Google is your friend.
  • Add ghee in the khichdi and mix it properly.
  • Now, at last, add peri peri masala as per your taste.
  • Tadah! Peri Peri Khichdi is ready.

You won’t believe it, but it tastes great. Now, I often eat peri peri khichdi.

PS – You can try oil instead of ghee. You can try oregano and chili flakes instead of peri peri. Now, it is up to you how to try new things on our basic food and make it delicious.

I thought this contest came at very perfect time for me because yesterday my father in law’s birthday and I have created cake first time in my life because we do not want to buy ready made cake from out side at this time.

Biggest challenge for me I have not oven as well I am not getting backing powder from out side any where. Still I am able to make it very tasty. See below steps and picture for your reference:

Ingredients: 1 big packet of bourbon biscuit(120 Gms), 1 small packet of oreo biscuit(50 Gms), 2 big packet og Good day biscuit(120 Gms each), 300 ml milk, 1 packet of eno, Chocolate syrup

Steps:
1. First take bourbon biscuit and seperate cream from the biscuit. Same you can do for oreo biscuit as well.
2. crush both together in mixer for 2-3 min. and take seperetely in bowl.
3. For 10 min put cream in refrigerator.
4. Take all Good day biscuit and crush it for 2-3 min and take seperetely in another bowl.
5. Add around 150 Gms milk in both mixer seperetely and then add eno(half packet in each mixure) and shake it well.
6. Take first mixer of Good day biscuit annd put in cooker for 20 min.
7. After 20 min. open cooker add layer of cream(which was in refrigerator) and on its top add another mixer of oreo and bourbon biscuit.
8. Put it for 40 min. in cooker and then open it.
9. Take entire stuff out from cooker and put in fridge for 2 hours.
10. Add any chocolate syrup on top of it and Enjoy..

I’m a novice but I make kheer 3-4 times a week.



Its a simple recipe blush


Boil milk in a pan.
( Sometimes I add one fifth of a milkmaid to reduce cooking time)
Take pre cooked rice & add to milk
Cook for 10 minutes.
Add sugar & cardomom . One can add dry fruits & kesar according to availability.
Don’t worry about how thick it is, it’ll thicken after cooling.

Pro tip smile – use short size or broken rice for better flavor.



Decoration done by my sister in law with fallen flowers.

Egg Keema: This one I made yesterday night for first time. Hard boil egg and then cut it into small pieces. Take 1.5 onion and chop into fine pieces. Take 2 tablespoon oil in a pan, put some cloves, bay leave and cumin seeds. Put onion in the pan and fry it till onion turns golden brown, add 1 tablespoon ginger-garlic paste and fry for another few minutes until onions leaves oil. Add one finely chopped tomato, salt, chilli, cumin powder, turmeric powder, garam masala and chicken/meat masala. Fry until mixture leaves oil. In a separate pan, boil water along with some peas(frozen or non-frozen). Add the peas and chopped egg to the masala, add some water and boil it till water evaporates. Eat it with paratha. Usually the spicier you make the tastier it is.

Ingredients -

2 cups maida
1 1/2 cups sugar
3/4 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 baking powder
2 large eggs
1/2 cup butter melted
1 tbsp vanilla extract
1/2 cup curd
1 cup water
1/2 tsp salt

Method -
Preheat oven to 350 degrees. Grease a baking pan and set aside.

In a bowl, mix together butter, sugar, eggs and vanilla extract. Mix until its smooth.
Then sieve together maida, cocoa powder, baking soda, baking powder, salt. After mixing them well, pour curd and then water. Mix until its smooth. Batter will be very runny.
Now pour the smooth batter in the greased pan.

Bake it in oven for about 35 minutes at 350 F or check until toothpick or fork inserted in centre comes out clean with just a few moist crumbs attached.
You can even add dry fruits like raisins and crushed cashew nuts too in the batter before putting inside oven or sprinkle chocolates on top after cake is taken out.

It’s really complicated. I have learnt how to pour oats into a bowl. Pour milk and fruits and sugar on top of it. Then with immense skills place the bowl on the induction and let it cook for 10 mins in low heat.

I’ve learnt how my mum does all of this.

Gulab Jamun

Ingredients :
khoya (mawa) 3/4 cup
paneer 1/8 cup
sugar 1 1/2 cup
saffron 2 strands
soda bi carb 1/4 tbsp
all purpose flour 2 tbsp
cardamom powder 12 tbsp
water 4 cups
ghee

Procedure :

cook a mixture of 4 cups of water, saffron strands, sugar until the syrup thickens. Remove and keep it warm.

grate khoya and paneer.

mix khoya, paneer, cardamom powder, soda bi carb and a little water to make to make it into soft doughs.

make small balls off the dough.

heat ghee and deep fry the balls until it turns golden brown.

drop the balls into the hot syrup.

remove the balls from the syrup and serve it without drying the syrup.

Take some roasted peanuts, take some grated coconut, take some tamarind, take some onions, garlic and ginger, take some green chillies.
Soak tamarinds in a lil bowl of water. Right. Now, mash the tamarind. Throw the fibers.
In a mixer add the all the ingredient and grind well.
Yayyyyy. Enjoy it with anything, it goes well with burger, pizza, dosa, roti, rice. sunglasses

There’s no fresh vegetables available from sometime at my place. My friends younger brother is stuck in a hostel in Punjab & they’re serving him rice and plain Dal from last 2 weeks both morning & night. I forwarded the link of this thread to him & he was pleased 😊
I learnt a long time back in a remote Himachal hamlet if you want to live independently then basic cooking is an essential skill.

Palak cheese poppers

It is a swift and tasty snack prepared with basic ingredients. A great appetizer recipe that I saw somewhere. Sadly, did not take a photo of the outcome confused


Ingredients :
Besan – 1/2 cup
Wheat flour – 1 tbsp
Water as required
Red chilli powder – 1/4 tsp
Haldi – 1 pinch
Green chilli paste – 1/2 tsp Spinach leaves, cheese cubes, cooking oil for deep frying.

Preparation :
1. In a mixing bowl add besan, wheat flour, red chilli powder, green chilli paste, haldi and mix well. Add water and mix well.

2. Dip spinach leaf in the besan batter, apply the batter all over the leaf.

3. Place cube of cheese on the spinach leaf and roll up while sealing the sides by folding them in.

4. Deep fry untill golden.

1 (8 ounce) box elbow macaroni
1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon saltground black pepper to taste
2 cups milk
2 cups shredded Cheddar cheese

Bring a large pot of lightly salted water to a boil.
Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes.
Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
Put macaroni into cheese sauce until coated.

Dear team Here is my entry with Fruit custard dessert recipe at home as below:- Ingredients:-
(1) 2cups or ½ litre full cream milk
(2) 2 tbsp custard powder
(3) 3 tbsp cold milk
(4) ¼ cup sugar
(5) ¼ tsp cardamom powder / elachi powder
Fruits:-
(1) 10 or ¼ cup green grapes, chopped
(2) 10 or ¼ cup red grapes, chopped
(3) 1 small sized or ¼ cup banana, chopped
(4) ¼ cup pomegranate seeds
(5) 1 small sized or ¼ cup mango, chopped
(6) ½ medium sized or ¼ cup apple, chopped

Custard milk:-
firstly, in a thick bottomed pan add milk.stir occasionally and get the milk to boil.meanwhile, in a bowl take 2 tbsp of custard powder. i have used vanilla flavour custard powder.and add 3-4 tbsp of milk and mix well.stir continuously, making sure there are no lumps formed in it.once the milk has boiled, turn off the flame and pour the prepared custard mixture into it.also add sugar. adjust the amount of sugar if looking for more sweeter fruit custard.mix continuously, keeping the flame on low.the milk changes colour to dark yellow.furthermore, it thickens slightly. adjust the consistency by cooking for long time.transfer to a small bowl and cool completely.

Fruit custard:-
Once the prepared custard milk has cooled completely, add chopped fruits of your choice.add, green grapes, red grapes, banana, pomegranate seeds, mango and apple.also add cardamom powder and mix gently.cover and chill for 2 hours or more.once the custard fruit salad has chilled, it turns more thick and creamy.add whipped cream or ice cream if required.finally, serve fruit custard chilled.

Pink sauce pasta

I have always had pink sauce pasta outside, decided to try it at home.
Pink sauce pasta is the best blend of white and red sauce pasta. This is a must try recipe for all the pasta lovers 😋

Ingredients:

100g pasta

For white sauce :
2 tbsp oil
2 tbsp maida
1 cup milk

For red sauce :
2 tbsp oil
2 medium size onions
3-4 garlic cloves
1 big capsicum
2 medium carrots
4 medium size tomatos
2 tbsp tomato sauce
1 tbsp oregano
1 tbsp chilli flakes
1/4 tsp black pepper powder
2 cup cheese grated
Salt as per taste
Water 1/4 cup

Method :
1. In a large kadhai boil 4 cup water and 1 tbsp oil.
2. Once the water comes to a boil, add 1 cup pasta. I used penne pasta.
3. Boil for about 10-15 minutes until the pasta is cooked properly.
4. Drain off the pasta and keep aside.
5. In a pan, heat oil.
6. Add plain flour to it and cook for a few seconds.
7. Once it changes the colour slightly, add the milk. Keep whisking and bring it to a boil. Cool until it’s thick.
8. Once the sauce is thick, get if off the flame nd keep it aside.
9. In another pan, heat oil.
10. Once the oil is heated, add chopped onions let it cook for few seconds.
11. Add garlic cloves , chopped capsicum and carrots. Let them cook for few minutes.
12. Add tomato puree ( boiled ). Mix everything well and let it cook for atleast 10 minutes.
13. Add the ketchup, oregano, Chilli flakes, salt as per your taste, black pepper powder and mix everything well.
14. Add the white sauce to the above ingredients and stir well.
15. Add water and grated cheese and mix well.
16. Add the boiled Penne pasta to the sauce and stir well.
The delicious pasta is ready to be served 😋

Ande ka omlette banane ka funda
Ingredients
3 eggs, beaten
1 tsp sunflower oil
1 tsp butter

Method
Season the beaten eggs well with salt and pepper. Heat the oil and butter in a non-stick frying pan over a medium-low heat until the butter has melted and is foaming.

Pour the eggs into the pan, tilt the pan ever so slightly from one side to another to allow the eggs to swirl and cover the surface of the pan completely. Let the mixture cook for about 20 seconds then scrape a line through the middle with a spatula.

Tilt the pan again to allow it to fill back up with the runny egg. Repeat once or twice more until the egg has just set.

At this point you can fill the omelette with whatever you like

Rice khichu recipe -
This is easy to make and a healthy traditional Gujarati afternoon snack. It is prepared by cooking rice flour in water with cumin seeds, green chilli and Papad Khar. It is served with oil and chilli powder.

Ingredients -

1 cup rice flour
2 cups water
1/2 tsp jeera powder
1 tsp jeera
1 tbsp oil
1 piece of green chilli
1 tsp papad khar

Method
- In a big pan heat water.
- Add jeera, jeera powder, green chilli and papad khar.
- Mix well and get water to boil.
- Add rice flour slowly and stir well.
- Stir continuously until the rice flour absorbs all the water.
- Break the lumps and form a soft mixture.

Khichu is ready to serve with some oil and chilli powder. Serve the rice khichu immediately.
