I've applied for Amazon pay ICICI credit card but there was a spelling mistake in my mother's name due to which they are not able to complete video kyc and have asked to edit my application, where can I edit it?

Whatever mother name you've given, stick to that and let the application get processed. No docs need to be submitted for mother's name validation.
Once the card is received, contact the bank to update the details. Otherwise live with same mother name, it is just for verification purposes when you call them and of no use else.
