It depends on whether you are traveling alone or with friends. If you will be staying alone then hostel would be a good option.

Have often seen couple families or families with children too staying at 'Narsingh' lodge (close to V.T./ C.ST.M.) in SoBo.
But if someone is only comfortable in star rated properties, or as someone above suggested ("friends"), then what can one say.
People stay at AirBnB, Oyo, StayUncle and other facilities too.
Everything is safe, until something problematic happens.
I used AirBnB at Goa, the property was clean and matched as shown in pictures. The host was also very good. Overall had a good experience.
Always read through the reviews of the property posted by previous guests, check the location of the property on how far its from public transport, restaurants etc. Sometime if the property is actually a hotel which is listed in public as well as AirBnB then directly check it out on Google Maps and read reviews posted for it there.
