Some people apply for specific countries even if they do not intend to go there as some embassies are easier than others.

Anyways just show enough funds in your account and if you have some prior Visa history it won't be any issue at all.
If you are going on vacation send the itinerary details along with hotel bookings and flight tickets.
Show genuine source of income, credible job, decent bank balance to prove you can fund your vacation/trip and have all genuine reservations made for travel.
If it’s all good, I see no reason for rejection.
Thought of sharing details about my trip to Switzerland, might help with a few details.
Schengen visa is not a problem at all. Only thing you should produce all genuine papers.
In Mumbai VFS does this job. I visited Europe in 2019 with 14 other family members. We all got visa without any hesitation.

Been to Dubai in first week of March 2023 bro. Didn’t travel anywhere else, all thanks to Covid and then me having a kid.
next trip might be to Europe again or Turkey sometime in December

Can you share the names of these countries where it is easier

According to you how much is enough
you just need to show that u have genuine funds and u can support ur trip without going broke. Not some huge amount u just transferred a few days back just to show in your account.
Plus salary slips is always required for proof with company letter of employment.
A dummy itinerary ticket also helps with flight details and hotel bookings
from what i have seen, France and Spain embassy is a bit easier for approval and u can also get multi entry.
