I agree....too much AC, too much battery charge of electric vehicles (toto etc) and obviously hooking causing these things....

A few months ago there was a power cut in south mumbai ...
And we all thought it was a sign of some terrorist attack 
hence the mischief makers cannot really hack through to the nodes via remote access or even mass attacks on the servers or other isolated computers monitoring everything.
And the eleventh incarnation of Vishnu has ensured no physical attacks ever happen. So it is safe (till the non biologically produced incarnation, sent on Earth by the divine, is here to protect and save the Universe).

Any way to run an AC on inverter without blowing it up?
If it were only for your zone or locality, then it might have been a physical issue with the line or substation.
But if long outages are happening across different substations, then it might be a deeper infrastructure issue or the load shedding being done to protect from overall grid collapse.
Writing to APGCL, AEGCL, APDCL for the latter is futile, as they are aware and/or helpless too.
Maybe raise this issue with the chief secretary of the state or their offices and also with central government departments or CPGRAMS.
And moving to a place with surplus electricity generation or availability and/or arranging power backup (as others already suggested) are the alternate to putting up with this.
Also a lot depends on the DISCOMs properly analysing demand, especially industrial peaks.. to avoid grid collapse due to surge! (Electricity cannot technically be 'stored' by them and any sudden peaks overwhelm the grid, leading to collapse.)

Select battery and inverter wisely as per the load
Inverter AC require less power than normal AC
Consider Starting Load for all appliances (including AC)
This (solar system) would remain non-functional/under-utilized throughout the year.

This year we're experiencing too long power cuts and then we see IPL matches fanfare going on with all those floodlights and extra jazz! Its fucking infuriating!!! Matches go uninterrupted in guwahati but rest of the day, hours long power cuts for us in 37-39 degree heat with extra humidity that makes it feel 10+ degree more hotter!!
F***!! My family has to throw away dal 4 times in one month bcz fridge cooling is not there anymore. Eggs, milk, butter, etc all gone bad! My mom stopped making dal and just water to vegetables and fish/chicken dishes now.

it's too hot these days, infrastructure is incapable of handling so much load...Just hope that things will improve in the coming years
